Homemade Granola

Lately I've been obsessed with baking granola. My new place has an oven, so naturally, baking feels new and fun. This recipe is inspired from a trip to Esalen.

 

Makes 4-6 Servings

3½ cups Organic Rolled Oats
½ cup California Almonds
½ cup Cashews
2 tbsp Sunflower Oil (or other)
½ cup Honey
¼ cup Maple Syrup
2 tsp Vanilla Extract (I always add an extra spoonful)
2 tsp ground Cinnamon (I always add more of this, too)
Freshly ground Nutmeg or Cardamom

Pinch of Salt

Blend dry ingredients, then toss with wet ingredients. Cook at around 275°F until the mixture seems toasted. Turn off oven and let sit in the oven until the mixture is dry and crumbly.
