Yummy Red Quinoa with Mango, Scallions and Cilantro

Lisa Pitelli of Smiling Dog Yoga in SLO turned me onto this combination of ingredients at her amazing Cafe. I did not get the proportions right, but it was still delicious.
1. Cook Red Quinoa according to Box Instruction. (Usually 1 cup quinoa to 2 cups water. bring to a boil. soft covered simmer for 15 minutes).
2. Mix dressing ingredients together: - smashed garlic - minced serrano - yellow curry powder - lemon juice - plain yogurt - olive oil
3. Toast slivered or sliced almonds.
4. Mince a bunch of scallions and some cilantro. Dice some mango.
5. When Quinoa was done, I allowed it cool a bit. Then I tossed it with the dressing, almonds, scallions, mango and cilantro. I made too much dressing, so the salad was "too wet". But it was still good. | |
